S'mores Cookies

As promised, I have a recipe for you all today. If you enjoy s'mores, you're in for a treat.
I found this recipe on Pinterest and thought the cookies looked so yummy I had to try it!
Let's get started with S'mores Cookies!






Makes around 3 dozen
What you'll need:
11 Tablespoons of unsalted butter, room temperature
1 cup of brown sugar, packed
1/2 cup of granulated sugar
2 large eggs
1 teaspoon of vanilla
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of cinnamon
2 1/2 cups of flour
1/2 cup of semi-sweet chocolate chips
1 cup of mini marshmallows
3 regular sized Hershey bars, broken into pieces
1-2 packages of regular graham crackers, broken into squares

Instructions:
1. In a medium sized bowl, whisk together the the flour, baking soda, salt, and cinnamon until combined. Set aside.
2. Using an electric mixer, cream butter with white and brown sugar until light an fluffy. Add the eggs and vanilla and mix until combined. 
3. Add the flour mixture to the butter and combine on low speed. 
4. Fold in the chocolate chips and mini marshmallows. Then, chill dough in the refrigerator for an hour (or overnight). 
5. Preheat the oven to 375 degrees. I used two 11x17 pans, but you can use whichever sized pans you would like.
6. Lay out the graham crackers side by side (they can be touching).
7. Place dough (however much you would like) on the graham crackers and press them down slightly with your fingers. 
8. Bake for 10 minutes (or to your liking). Because I had so many, I baked them around 10-15 minutes. 
9. Remove cookies from oven and press down a Hershey bar piece on top of the cookie.
If you would like your chocolate more melted, put back in the oven for 5 minutes. 
10. Enjoy! :)
